A nice big bowl of black eyed peas & ham has always been one of my favorite comfort foods. For years, I only really had them on New Year’s Day. Why? This is such an easy & fulfilling recipe that should definitely be eaten on more than just one day a year.
Ingredients:
- 2lbs black eyed peas
- 2.5lbs smoked ham shanks
- 1 large yellow onion
- 4 cloves fresh garlic minced
- 32oz chicken stock
- 32oz chick broth
- salt & pepper to taste
- creole seasoning to taste
- 2 fresh jalapeno peppers
Directions:
- Soak the beans overnight
- In your crockpot, add the beans, ham shanks, onion & garlic
- Add the chicken stock & broth until the beans are covered (you’ll have some broth leftover, put it to the side
- Cook on low for 7 hours
- Add salt, pepper and creole seasoning (you don’t want to add the salt too early as it can make the peas tough)
- Once the beans have cooked for 7 hours, remove the ham shanks, debone and add the ham back into the beans
- Dice the 2 jalapeno peppers and add to the beans
- Cook an additional hour
This is an incredibly easy dish to cook and it serves 10-12. For half the serving, just cut the recipe in half, easy peasy (see what I did there?) It’s also a very affordable dish which is always a plus!
